Since this is one of our most requested recipes I thought I would add it to our blog to share with our guests.

Snug eggs for Two

1 small potato, diced 4 eggs

1/2 small onion, diced 2 slices of ham

2 Tablespoons heavy cream fresh or dried chives

Fry potatoes and onion in butter or olive oil until just tender, set aside. In two six inch ramekins sprayed with cooking spray place the slices of ham.

Place potatoes and onions down the center of each ramekin on top of the ham. Break a egg on one side of the potatoes and then another egg on the other side of the potatoes. Pour one tablespoon of heavy cream over the ham, eggs and potatoes. Sprinkle chives on top. Bake in a 375 degree oven for 18-20 minutes or until desired consistency of the eggs, some people like the eggs runny and some like them hard. Enjoy!
