1 cup unsalted butter, softened 1 cup sugar 1 cup brown sugar 2 eggs 1 cup whole wheat flour 1.5 cups self rising flour 2 cups walnuts, coarsely chopped 1.5 teaspoons maple extract Pre-heat oven to 350 degrees. Combine: butter, sugars, eggs, extract and beat until combined. Combine flours and add to butter mixture a cup at a time and mix until combined. Add in walnuts. Scoop or spoon onto greased baking sheet and bake in 350 degree oven for 10-12 minutes. Remove to cooling rack. When cooled ice with maple frosting.
4 Tablespoons butter, softened 2 cups powdered sugar 1 teaspoon maple extract 3-5 Tablespoons 1/2 & 1/2 Mix frosting ingredients until spreading consistency adding more sugar or 1/2&1/2 if needed. Frost cookies. Makes about 4 dozen cookies
Orange Butter Cookies
2 1/3 cups flour 1/2 teaspoon salt 1/4 teaspoon baking powder 1 cup unsalted butter, softened 1 cup sugar 3 egg yolks 1/2 teaspoon each of vanilla & orange extract 2 Tablespoons fresh orange zest In bowl add flour, baking powder and salt; set aside. In another larger bowl beat: butter, sugar and zest. Add egg yolks one at a time beating after each addition. Add extracts and beat until blended. Add the flour mixture and mix on low speed until blended. Divide dough in half and wrap in plastic wrap, chill. Pre-heat oven to 350 degrees. Line cookie sheet with parchment paper. Roll out dough half at a time about 1/4 inch thick. Using a 1.5 inch round cookie cutter cut dough and place on parchment lined cookie sheets. Bake 9-12 minutes or until golden brown. Cool on cookie rack. When cool frost with orange glaze.
